La vie est belle…especially when there is strawberry shortcake involved! 🍓🍰
I was in the mood for something fruity and had two packs of strawberries that were about to cross over.
Oddly, I didn’t feel like baking…so I went to No Frills and bought a pack of ‘Farmers Market’ mini Angel Food Cakes and some @coolwhip (you know I love my Cool Whip).
I did however, make the strawberry compote to complete the treat!
Cut up strawberries and put in a pot with a splash of lemon juice and maybe 1/4 cup of sugar, let it boil and VOILA.
HOT TIP (literally): wait until the compote has cooled before plating…it took a few tries to make the cakes NOT look like volcanos
